Quick early summer recipe: trofie pasta with pesto and salmon

Quite easy to make, this recipe uses typical Genoese-style trofie pasta with basil pesto and smoked salmon, all readily available ingredients produced by trusted sources. The preparation time is also quite convenient for everyone, even those whose work leaves them with little time for cooking: just 10 minutes and voilà, the meal is ready to be served!

Trofie pasta with pesto and salmon: ingredients for 4 people
- a 500 g pack of Genoese-style trofie or trofiette pasta
- a jar of ready-made pesto
- 200 g sliced smoked salmon or fresh salmon, to be cooked
- 2 tablespoons of extra virgin olive oil

Directions
Bring about 2 liters of water to boil in a pot or saucepan. Once it has come to a boil, salt the water and then add the trofie, cooking for the time indicated on the package (the recommended amount of pasta for adults is about 80 g per person, but if you want larger portions you can use the entire 500 g package).
When the pasta is cooked, drain it and pour it into a large pasta or salad bowl. Add a few teaspoons of cold pesto, a couple of teaspoons of extra virgin olive oil, and the salmon cut into small pieces. Mix well and serve. Enjoy your meal!
Tips for making the recipe even more mouthwatering
Chopped cherry tomatoes can be added to the mixture, which will help make the dish even more refreshing and delicate.
As for salmon, if you buy smoked salmon that is pre-sliced and has been flash-frozen, you can use it as-is. If you opt for a slice of fresh salmon, on the other hand, it must be cooked in order to be safe to eat, dicing it into cubes that are well-suited to the dish.
