The true star of this recipe is puttanesca sauce, made with a rich and velvety tomato base enhanced by the intense flavors of olives, capers, anchovies, garlic, and chili pepper.

To achieve a truly delicious result, starting with a high-quality tomato purée is essential. That's why at Healthy Italia we use tomato purée made with 100% fresh ingredients—only tomatoes and a basil leaf—with no added salt, sugar, or dried herbs.

Which olives should you choose?

The olives deserve a special mention, as they are a key ingredient in giving the sauce its personality.

To create a softer and more balanced flavor profile, at Healthy Italia we prefer using Castelvetrano or Berice olives. While they are not the varieties traditionally used in pasta alla puttanesca in Italy, their sweetness, fleshy texture, and delicate flavor make them ideal even for those who do not usually enjoy the stronger taste of olives.

Pasta alla puttanesca: preparation

Let's see how to prepare an excellent puttanesca sauce step by step:

  • Pour a drizzle of extra virgin olive oil into a non-stick saucepan
  • Add the peeled garlic and sauté it gently. Important: to release all of its aroma, the garlic should not be chopped but simply crushed with the palm of your hand!
  • Add fresh chili pepper or chili flakes and let the flavors develop until the garlic becomes golden and lightly amber-colored
  • Pour in the tomato sauce and add the olives, either roughly torn by hand or chopped with a knife
  • Stir in the chopped capers and mix all the ingredients well
  • Add the previously boiled and drained al dente pasta
  • Toss everything together so the flavors combine perfectly

Originally, this sauce was referred to by a more elegant name, "salsa alla femme" ("ladies' sauce"), because the term "puttanesca" ("in the style of prostitutes") was considered too direct for the time. Over the years, however, the popular name has become established and is the one we know it by today.
